Campfire breakfast that fills you up - and practically takes care of itself.

I'm not one of those who enjoy a light little breakfast after a night in nature; I need a bit more than that.

To be honest, I’m probably the type who could eat 'dinner' three times a day and skip cornflakes and rye bread sandwiches.
Don’t get me wrong, I love a good piece of rye bread, but if I could have a small steak with mashed potatoes and salad, it would have to be a special day if I didn’t want that too – unfortunately, breakfast and lunch mostly end up being oatmeal and rye bread. I still think I owe myself that steak and mashed potatoes for breakfast, but hey, you’re allowed to dream 🤩

Today I want to show you something I often make as campfire breakfast, and that we often turn to when cooking breakfast over a campfire. The whole family likes it, and it’s very easy to make.

We’ve made it when we’ve had guests, when we’ve spent a night in a tent or shelter, or simply packed a basket in the morning and lit a fire in the garden.
It’s campfire breakfast that both fills you up and tastes great!
It’s super simple to prepare, and there’s a good chance you already have the ingredients.
Then you can sit back and relax with a good cup of campfire coffee in one hand while the food takes shape, and you stir the campfire breakfast with the other hand.

You will need the following:

Bacon, sausages, or both.
Potatoes (raw) – cut into smaller pieces.
Small tomatoes – whole
An herb of your choice (rosemary, thyme, marjoram, etc.)
Eggs.
Cream.
Butter or oil.
Salt and pepper.
You can also easily warm bread, but it’s not necessary.

First of all, I suggest you start by making a good pot of campfire coffee. We love making campfire coffee in our percolator pot.
There are many ways to make coffee over a campfire, but typically we use our hangpot with a coffee plunger, and if there are more than two of us, we make our campfire coffee in our percolator pot.
In a percolator pot, the water circulates through the ground beans, and when the coffee has the strength you want, you lift the percolator with the beans out so it doesn’t keep brewing. Now back to what it’s all about, filling, easy, delicious campfire breakfast 😋

Once the coffee is on, the first thing you need to do is get the potatoes going.
I prefer a large pot with a lid so you can keep the steam in; they need to be pan-fried in butter or oil.

You shouldn’t have too much heat under the pot, and they need some time. Make sure to turn the potatoes along the way and get down to the bottom of the pot so you get it all.
If you think they’re sticking too much, add more fat.
Season with salt and pepper, and throw your herbs into the pot; I don’t chop them, just put them in whole – it’s easy to pick the stems out afterward.
When the potatoes are almost tender, add the whole tomatoes and stir a few times while you prepare the rest.

Then you need to fry the bacon and/or sausages.
Sausages take longer than bacon. Both are best cooked at not too high heat but for a bit longer time.

Campfire breakfast

Finally, you make your scrambled eggs.
I find it easiest to crack them into a container at home, add a little cream or milk, salt, and pepper, so they’re ready to pour onto the pan when you’re by the fire.
When cooking your scrambled eggs, it should be on low heat, and instead of 'stirring' them, you should gently 'fold' the egg mixture.
I always prefer to make scrambled eggs in butter because I think it gives the softest and most flavorful result, but oil works well too.

At last, just enjoy your meal – I’m sure you’ll be happy and full, with plenty of energy in your stomach for a new day 😊
